    Swiss Cheese Beef Roll-Ups with Rich Brown Sauce 

     Ingredients (Serves 4)

    For the Beef Roll-Ups:

    • 4 thin beef cutlets (such as rump steak or top round)
    • 4 slices Swiss cheese (Emmental or Gruyère)
    • 1 onion, thinly sliced
    • 1 tbsp Dijon mustard
    • Salt and black pepper
    • 1 tbsp oil or butter
    • Toothpicks or kitchen twine

    For the Brown Sauce:

    • 1 tbsp butter
    • 1 tbsp flour
    • 400 ml beef broth
    • 1 tsp soy sauce (optional, for deeper flavor)
    • Salt and pepper to taste

     Instructions

    1. Prepare the Roll-Ups

    Lightly pound the beef cutlets until thin and flexible.
    Season with salt and pepper, then spread a thin layer of mustard.
    Top each piece with a slice of Swiss cheese and a small amount of sliced onion.
    Roll tightly and secure with toothpicks or kitchen twine.

    2. Sear the Beef

    Heat oil or butter in a skillet over medium heat.
    Brown the roll-ups on all sides (about 5–7 minutes).
    Remove and set aside.

    3. Make the Brown Sauce

    In the same pan, melt the butter, then add flour and stir to form a roux (1–2 minutes).
    Gradually whisk in the beef broth to avoid lumps.
    Add soy sauce if using.
    Simmer over medium heat until the sauce thickens (5–10 minutes).

    4. Final Cooking

    Return the beef roll-ups to the sauce.
    Cover and simmer on low heat for 20–25 minutes.
    Ensure the beef is tender and the cheese is melted inside.
