Eggplant Salad

 

Eggplant salad is one of my favorite salads because eggplant has many benefits, including being rich in antioxidants. Once you try it, you won’t be able to do without it.

 

Ingredients:

  • 3 eggplants, diced
  • Green or colored bell peppers, diced
  • Tomatoes, diced
  • 5 cloves of garlic, grated or finely chopped
  • 3 tablespoons of coriander
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Bay leaves for aromatic effect
  • A little olive oil or vegetable oil, as desired
  • A little water

Preparation:

In a pot, combine the eggplant, peppers, tomatoes, garlic, and coriander. Add the spices and cook over low heat, stirring occasionally, until the ingredients are well combined and the water has not completely evaporated. Serve warm or cold.
